Recipe for Baigan Ka Bharta

Ingredients :

One Large Baigan (you can easily get this in any market)
one Big onion bulb (nicely chopped)
6-8 Green Chillies (nicely chopped)
2-3 Tomatoes (nicely chopped)
Muttor (peas) 2 table spoon
Ginger Garlic Paste (one teaspoon)
Haldi/Turmeric pwdr 1/4th teaspoon
Red Chilli Pwdr (one teaspoon)
Salt ( according to taste)
Oil 1-2 tablespoon (if you health concious then add one tblspn,if u r food concious then add 2 :)
Kothmir (Coriander Leaves) one whole bunch or a fist full
Zeera pwdr half teaspoon

Cooking Method:

  • Slighty rub a drop of oil on the brinjal and roast/grill on the stove and keep turning it.Do remember that the skin of that brinjal shud turn into brown (that shows that its nicely cooked).
  • Take a big vessel or bowl,and put that roasted brinjal in it and keep it for a while and peel out the skin of the brinjal.Take out the crown of the brinjal and now mash the peeled brinjal with the Daal ghowtni or hand blender.
  • Take a non stick Sauce Pan or a Kadhai,add oil and then onions.Stir it for 5-7 minutes and then add greenchillie,ginger garlic paste,haldi,salt,red chilli pwdr,Muttor and tomatoes,keep stiring it untill the tomatoes gets tender.
  • Add mashed brinjal paste,zeera pwdr stir it for few minutes,kothmir.half cup of water,and leave it for 8-10 mints on slow flame.

Its done :) Have it with Roti or Rice.

  2. Can we substitute anything else for brinjal..hehehe...nobody likes brinjal at my place except for me..but wud definetly give it a shot..

  3. No Shaista,we cant substitute anything else for Baigan...but try this dish,every one will start loving Brinjal :)
