Mahaqaliya




Ingredients:
  1. Lamb Mutton:1lb or ½ kg with bones and some fat
  2.  Pea Nut:50grms or Paste 1.5tbl spoon
  3. Sesame Seeds (til):50 Grms:1.5 tbl spoon
  4. Coconut Pwdr:100 Grms:2 Tbl spoon
  5. Onion :One medium lightly roasted
  6. Roasted Zeera Pwder:1 tbl spoon
  7. Tamarind Pulp:half cup (according to how much sourness you want it to be)
  8. Curry Leaves:2 Strands or 10 leaves
  9. Dry Red Chili:3
  10. Zeera Whole:1 tspoon
  11. Mustard Seeds:1 Tspoon
  12. Onion seed:half tspoon (Optional)
  13. Green Chillies: 3
  14. Oil:3 Tbl spoon
  15. Water:1/2 cup
  16. Haldi:2 pinches
  17. Salt:According to Taste
  18. Red Chilli Pwdr:1 teaspoon
  19. Ginger Garlic Paste:1 tblspoon
  20. Coriander Leaves:1 tbl spoon.
Method:
  • Dry roast Peanuts, Sesame Seeds, Zeera and Coconut (all individually). Also, Saute/Dry Roast onions. Powder/paste all the of them.(MAIN MASALA)
  • Take a pressure cooker, add oil,let it heat. Then add Zeera,Mustard seeds and let it crackle for a minute. Then add Dry Red Chillies, and Curry Leaves. Let it fry for a minute.
  • Then add Mutton, Fry it again for a minute, then add Ginger Garlic Paste,Haldi,Salt,Red chilli powder and sauté it till the mutton is all dry.
  • Then add the paste of peanut,sesame seeds,coconut,onions and zeera powder.(MAIN MASALA)
  • Close the pressure cooker, And let it cook till 8 whistles. Or till the mutton gets tender.
  • Open the pressure cooker and Add, Tamarind pulp and half cup of water,green chillies and coriander leaves.
  • Let it cook without the pressure for 10 mints on slow flame.
  • You can pair it with Khadi Daal. Can be served with Roti or Rice.

Tips:
  • Instead of Mutton, You can also add Small tomatoes/Karela/Fish heads.
  • Just sauté the main masala in the Tadka….and add tamarind pulp, some water.
  • Just sauté the tomatoes in Oil, and drop it in the Masala for 5 minutes. 
 
 
 
 
 
 
 
 
 
 
 

Bread Pizza




Ingredients:
  1. Bread 12 Slices (white, wheat or any bread)
  2. Mozzarella cheese
  3. *Chicken one inch pieces/Minced Meat/Prawns (Sauté it in a pan with some salt n pepper)
  4. Capsicum 2 cups (Variety of colors,Red,Yellow and green)
  5. Onions one cup
  6. Tomato 1 Cup

Pizza Sauce (Recipe mentioned below) you can also use the readymade one.

·         Olive oil-1 tbl spoon

·         Garlic 1 tbl spoon (crushed)

·         2 tbl spoon Capsicum small bits (omelet onion size)

·         2-3 Tomatoes (freshly pureed)

·         Red Chili paste/Pwdr for the Hotness ½ tspoon

·         Italian Seasoning 1tspoon

·         Salt-according to taste

·         Black pepper pwdr a pinch

Take a pan, Pour olive oil, Sauté Garlic for 30 sec and add capsicum then add all the other ingredients and let it cook till it turns into a saucy consistency.

Method:


Pre Heat Oven for 350 degrees.

Mix Capsicum, onions and Tomatoes, Sprinkle some salt n pepper powder.

Spread Pizza Sauce on each slice of bread (only on one side).

Sprinkle veggie mix

Sprinkle Chicken Pieces

Sprinkle Grated mozzarella cheese

Keep it on a big baking tray, and bake it for 15 Minutes.


Tips:

You can also use leftover Tandoori Chicken/Mutton

Spread a little butter before spreading the pizza sauce on the bread slices.

Simple chicken Curry

This is the most simple and my favorite curry, invented by my mom.we have grown up eating this curry.

Ingredients:

Chicken 1kg:12 pieces
Dry red chillies:3
Garam Masala:1 teaspoon (grounded or whole upto u)
Onions:1 big bulb (Sliced)
Salt:acc to taste
Black Pepper powder:1/4th teaspoon
red Chilli powder:1 teaspoon ( i like it to be spicy)
Haldi:1/4th teaspoon
Oil:2 tblspoon
Coriander Leaves. Mint leaves:2-2 tablespoon
Green Chillies:3-4
Ginger Garlic Paste: 1 tbl spoon

Method:

Heat Oil in a non stick pan,add onions & Dry Red Chillies, fry it till it looks transparent.

Add Ginger Garlic Paste, fry for 1 minute

Add Haldi,Salt and red chilli pwdr ,stir for few seconds

Add Chicken.Put lid on the pan and let it cook for 20 mints.

Add garam masala,Green Chillies, Black Pepper powder,Mint leave,Corainder leaves and stir it.

Leave it for 10 mints.

Tip: You can make it liquidy if dont have any daals or sambhar to go with it, jus add water n 1/2 lemon juice.

And its Ready : Eat with rice/chapati/naan.

Kheema with Capsicum



Im sure you are going to love this one.You can make atleast 10 different dishes with minced meat (kheema), one of them is Kheema with  Capsicum.

Ingredients:

Minced Meat : 1/2 Kg
Capsicum :2-3 Big ones,cut into small pieces.
Green Chillies :2-3
Kothmir/Coriander leaves : a bunch
Pudina/Mint leaves :10 leaves
Onions : 2 big ones thinly sliced

Masala :
Salt : According to taste
Turmeric pwdr : 1/2 Teaspoon
Red chilli Pwdr :1 teaspoon
Ginger Garlic Paste : 1 table spoon
Oil : 2 tbl spoon






















Method  
  • Pressure cook minced meat with a pinch of turmeric,a pinch of ginger garlic paste a pinch of salt for 2-4 whistles.
  • Take a Non-Stick sauce pan and add oil,put thinly sliced onions and fry it till they get transparent.
  • Add salt,ginger garlic paste ,turmeric pwdr,red chilli pwdr and add pressure cooked minced meat.Stir it for 10 mints atleast ,the oil should start extracting from the corners.
  • Add capsicum pieces,green chillies,kothmir,pudina leaves and leave it on medium flame for 10 mints....
ITS READY :)
TIP: Instead of capsicum,you add,Beans,Muttor,Potatoes,Cauliflower too.
Also make khatti daal as a side dish for this,can have this with Roti and Rice too.Mostly plain rice.







Tomato Chutney


Hello Everyone,

I just of thought of posting the recipe for Tomato Chutney.I  luvvvvvv this dish as its quick n very easy to make, this is the first dish which i have learnt from my Mommy when i was in 6th or 7th standard.I was very picky and fussy about vegies when i was i young,so whenever my mom use to make vegies n all so i use to cook tomato chutney for myself and use to have it with rice (never use to skip my food :)

So let me start with my fav dish Tomato Chutney......


                                                     Ingredients :
Tomatoes-6-8 (always use desi tomatoes for this dont use Roma Tomatoes or Banglori Tomatoes)
Karya Paak/Curry leaves:10 leaves
Green Chillies : 2 long
kothmir/Coriander Leaves :just for garnishing

Tadka:
Zeera/Cumin Seeds : one teaspoon
Oil : 2 table Spoon
Rai (mustard seeds): Half Teaspoon
Dried Red Chillies : 2
Garlic :One or 2 pieces

Masala:
Salt :1 teaspoon or according to your taste
Red Chilli Pwdr : 1 teaspoon
Turmeric :1/4th teaspoon
Ginger Garlic Paste:1 Teaspoon          

Method
  • Take a kadhai/Pan and pour oil in it ,add Tadka ingredients and let it fry for a while.(add curry leaves in the last)
  • Add tomatoes,and the Masalas( salt,red chilli pwdr,ginger garlic paste,turmeric pwdr),Stir it and leave it on medium flame for 15 -20 mints till the tomatoes get tender.
  • Keep Stirring it every now n then

  • Add Kothmir/Coriander Leaves and Green Chillies and leave it for 10 mints.

Yummy Tomato chutney is ready......its easy n quick.Try it with Khichdi,Plain Rice with Ghee.hmmmmmmmmmm it delicious.

Tip : You can even try this with grinded tomatoes it takes lot of time to cook as there will be lot of water in it.

Tip : You can even keep this dish in the parties as a side dish,along with ur non veg dishes n all.Your Guests will love it.

Recipe for Baigan Ka Bharta

Ingredients :

One Large Baigan (you can easily get this in any market)
one Big onion bulb (nicely chopped)
6-8 Green Chillies (nicely chopped)
2-3 Tomatoes (nicely chopped)
Muttor (peas) 2 table spoon
Ginger Garlic Paste (one teaspoon)
Haldi/Turmeric pwdr 1/4th teaspoon
Red Chilli Pwdr (one teaspoon)
Salt ( according to taste)
Oil 1-2 tablespoon (if you health concious then add one tblspn,if u r food concious then add 2 :)
Kothmir (Coriander Leaves) one whole bunch or a fist full
Zeera pwdr half teaspoon

Cooking Method:

  • Slighty rub a drop of oil on the brinjal and roast/grill on the stove and keep turning it.Do remember that the skin of that brinjal shud turn into brown (that shows that its nicely cooked).
  • Take a big vessel or bowl,and put that roasted brinjal in it and keep it for a while and peel out the skin of the brinjal.Take out the crown of the brinjal and now mash the peeled brinjal with the Daal ghowtni or hand blender.
  • Take a non stick Sauce Pan or a Kadhai,add oil and then onions.Stir it for 5-7 minutes and then add greenchillie,ginger garlic paste,haldi,salt,red chilli pwdr,Muttor and tomatoes,keep stiring it untill the tomatoes gets tender.
  • Add mashed brinjal paste,zeera pwdr stir it for few minutes,kothmir.half cup of water,and leave it for 8-10 mints on slow flame.

Its done :) Have it with Roti or Rice.
